UOW Malaysia KDU Penang University College Shines In Dubai


George Town, 12 March 2019 – Inspired by Asian folklore and legends, a Penang girl’s artistic sugar sculpture of an elephant and a girl in search of a mystical fruit won gold at the recent ExpoCulinaire 2019 in Dubai from March 4 to 6, 2019.

Culinary arts student Khor Kai Wern wowed the panel of international judges with her sugar art, which was based on a folk tale she heard as a child.

“A girl, along with her magnificent elephant companion, set off on a treacherous journey in search of the sacred longevity peach.

“Together, with trust and willpower, the girl and the elephant overcome all of nature’s obstacles along the way. The longevity peach is found in the end and she gives it to her beloved mother with triumph,” Kai Wern recalled the tale.

To depict the tale, Kai Wern carved an African bull elephant ornately adorned with tasseled cloth drape over it and a howdah or elephant saddle on its back. The saddle is large enough to balance a tray or plate. She depicted the nubile girl in a snow white dress, dancing atop the elephant’s head.

Kai Wern, 21, is currently pursuing a diploma in Professional Chef Training. She said although she carved a bull elephant, she kept reflecting on her own mother, who was supportive, caring, loving and strong. She said she thought of herself as she carved the dancing girl with hands upraised.

“The girl represents me because I always try reaching for the stars, my dreams and hopes. This art is about my mother and I going so far to Dubai to win gold,” she said.

Kai Wern said she hand-carved the art using fondant tools. She also painstakingly rolled out thin strands to create the girl’s hair in the display with her palms to looks more natural and artistic.

“Details are all-important in pastry art display. It took me four months to finish my display because I focused on the finest details, which is what made it possible for me to bring back gold,” she said.

UOW Malaysia KDU Penang appreciated the student’s achievements by giving her a School of Hospitality, Tourism and Culinary Arts award scholarship worth RM1,200.

Her achievement comes from the training she received, which is in collaboration with the renowned Swiss school, International Management Institute Switzerland (IMI), which recently rose five places in the annual QS World University ranking. Sitting now at 12th place globally, IMI is among the leading institutions offering hospitality management education internationally.
